I also put the carcass in the freezer and when I have a couple I put them in a large stock pot with carrots, celery, onion, sprigs of thyme, a bay leaf, some parsley and basil, and 1 Tbsp of peppercorns. Fill the pot about 2/3rds full with water, bring to a boil, then simmer for 4-6 hours. Strain and then put into containers to freeze. I actually use canning jars (just don't fill all the way). They are amazing. I use them to make chicken and noodles and as they are floured the flour comes off as you add them and it helps to make a gravy. But, if you don't like that texture or you can to control it better, you can boil the noodles separately and add them.
